- 300g of mushrooms
- 400g of vegan mince
- 5kg of white potatoes
- 2 Vegan oxo cubes
- 3 tbs of Vegan ‘beef’ style gravy
- 1 bulb of garlic
- 1 tin of sweetcorn

- 3 tbsp wholegrain mustard (Check for a vegan-friendly one – we use Tesco’s own).
- 3 tbs nutritional yeast
- 1 onion
- 3 tbs flora light
- 2 tsp mixed dried herbs
- 2tbs olive oil
- 1 large cooking pot or pan
- 1 small saucepan
- 1 wok or large frying pan
- Large cooking spoon

Vegan Cottage Pie Recipe
This vegan cottage pie recipe is wonderful comfort food for the chillier autumn evenings which are just around the corner! We have used vegan mince but if you are not a fan of vegan meat replacement products, you can simply double the amount of mushrooms used instead.
Peel the potatoes and chop in half (or quarters if large). Place these to cook on a medium high heat in a pan of boiling water.
Wash and chop the carrots and place these to cook on a medium high heat in a small saucepan of boiling water.
Place the olive oil into a wok or large frying pan on a medium heat. Chop the onion and mushrooms and place these in once the oil has heated. Add the mixed herbs and stir in. Cook for 5 minutes before adding the mince. Turn up the heat to medium-high and cook for 5-10 mins until mushrooms are cooked and any water has evaporated.
Meanwhile. Peel and chop the garlic and make the gravy according to packet instructions.
Add the garlic, stock cubes, wholegrain mustard and nutrition yeast in with the mince and stir. Allow flavours to combine for 2-3 mins. Then, remove the carrots from the bob and drain before adding them to the wok. Then, add the sweetcorn and gravy. Stir the mixture and reduce heat to low. Leave to simmer while preparing the potatoes.
When the potatoes are cooked, remove them from the hob and drain the water away. Add the Flora to the potatoes and use the masher to mash until smooth and fluffy.
Remove the mince mixture from the hob, stir and pour into the oven dish to about ¾ high. Then, fill the top of the dish with mashed potato. Use a spoon to spread the mashed potato evenly across the dish.
Place in the oven at gas mark 6 / 200 degrees and cook for around 45 mins until the top is browned.
Serve immediately or place in storage containers and allow to cool before storing in the fridge or freezer.
