Simple Vegetable Pasta Recipe2
  • 1kg pasta
  • 2 tins of chopped tomatoes
  • 1 tube of tomato puree
  • 3 tbsp of nutritional yeast
  • 1 bulb of garlic
  • 300g of mushrooms
  • 1 aubergine
  • 1 tin of sweetcorn
  • 2 courgettes
  • 1 red onion
  • 2 tbsps of olive oil
  • 1 tbsp mixed dried herbs

Simple Vegetable Pasta Recipe Method

This simple vegetable pasta recipe is quick and easy to make, but very tasty. It’s great for batch cooking as it keeps really well. Serve with vegan garlic bread and/or salad. This recipe is designed for batch cooking so makes lots of servings but if you want to make it for an evening meal, simply use 25 – 50% of the ingredients listed.

Peel and chop the red onion into large chunks. Peel the garlic, remove the hard ends. Place these ingredients into a blender with the olive oil and blend until liquidised. Then, pour this paste into the wok and set over medium heat.

Meanwhile, place a large pan of water on the hob, empty the pasta in, put the lid on and leave to boil, stirring occasionally. Cook the pasta according to the times stated on the packaging (usually 8-12 mins).

When the onion and garlic paste starts to bubble, add the mushrooms and the herbs. Use a spatula or large spoon to stir and cover the mushrooms with the paste and seasoning.

Chop the aubergine and courgettes. When the mushrooms are almost cooked and any water has evaporated, add the aubergine, courgette and sweetcorn and stir. Cook for 5-10 mins, stirring occasionally, until all the vegetables are cooked.

Add the tomato puree and stir in. Then add the nutritional yeast and stir in. Allow the flavours to combine for 2 minutes before adding the tinned tomatoes and stirring these in. Turn the heat down low and leave the sauce to simmer for 5 mins.

When the pasta is cooked, remove from hob and drain.

Stir the sauce and turn off the hob. Add the sauce to the pasta and stir in. Serve immediately or place in storage containers and leave to cool before placing in the fridge or freezer.
