quick and easy vegan burrito recipe
  • 1 pepper (Red, Green, Yellow)
  • 1 small Red Onion
  • 3 cloves of garlic
  • 2 packets of microwave rice
  • 6 tortilla wraps
  • small tin of sweetcorn
  • 2 tomatoes
  • 1 teaspoon olive oil
  • 250g mushrooms
  • Old El Paso Mexican Roasted Tomato & Pepper Fajita Seasoning Mix

  • Salsa
  • Optional – Black beans, guacamole, vegan cheese

Homemade Quick & Easy Vegan Burrito Method

The great thing about these easy vegan burritos is that they are customisable. You can add or remove ingredients easily and opt for a mild or spicy outcome.

To create your very own quick and easy vegan Burrito just follow the method below…

Peel the garlic cloves and remove the hard ends. Use the garlic press to crush the cloves.

Chop the onion, pepper and mushrooms as desired. You can dice or cut into strips depending on your personal preference.

Use a teaspoon of olive oil and heat it in the pan gently. Add the garlic, onion, pepper and mushrooms to the pan on medium heat. Stir frequently to cook evenly.

Chop the tomatoes. Place a sheet of tin foil over a clean plate and a tortilla wrap on top.

Once they begin to brown add the tofu, sweetcorn and half of the seasoning sachet to the pan. Remember to stir consistently. Cook for 5-10 minutes until ready.

Put the microwave rice into the microwave. They usually take 1-2 minutes per packet. Once cooked pour into the pan and add the other half of the seasoning sachet. Stir well for 2-3 minutes over the heat.

Remove from the heat and place the mixture onto the tortilla wrap. Keep it to the centre of the wrap.

Add some chopped tomatoes, salsa and guacamole/vegan cheese as desired. Fold each end over the mixture, then begin to wrap with the foil to keep everything tight. Cut down the centre and repeat.

Serve immediately with your choice of accompaniment. Goes great with a side salad, fries or wedges.
